Cooking Directions: 1. Cut onion into very thin slices. 2. Cook as directed below, until instant-read thermometer inserted in thickest part of chicken reaches 165 degrees F. Stove-Top: Cut each breast or thigh into 4 pieces. Heat 2 tbsps oil in 10-inch skillet over medium heat; add onion. Cook 6 to 8 minutes, stirring frequently, until onion is tender (not brown). Add sauce, seasonings, and water; stir to combine. Add chicken pieces and heat to boiling. Reduce heat to a simmer. Cover; cook 25 to 30 minutes, stirring occasionally. Slow Cooker. Add sauce, seasoning and water into 4- to 5-quart baking dish/pot; stir to combine. Add onion and chicken; cover. Cook on high 4 1/2 -5 hours or low 8 – 9 hours. Pressure Cooker: Add sauce, seasoning and water into 4 – to 5 – quart baking dish/pot; stir to combine. Add onion and chicken; cover. Cook on high/meat setting 10 to 12 minutes; vent. 3. Transfer cooked chicken to cutting board. Strain sauce and discard bay leaf. Shred chicken with forks. Return chicken to dish with juices; stir to combine. Cooking Suggestion. Chicken Tinga.
