Our version of the traditional Thai Tom Kha Phak soup features organic sweet potatoes, tender shiitake mushrooms and firm, housemade tofu in a sweet coconut milk base. Amy's chefs use tangy lemongrass and kaffir lime leaf with just enough mild spices to bring big flavor to this satisfying vegan soup. Each serving contains plenty of plant based protein and fiber and makes for a hearty meal when served over rice or another grain. Suitable for vegetarian, vegan, gluten free and kosher diets: Simply heat and serve for a bowl of delicious soup that's ready in minutes! Shake before opening. Ovens may vary. Microwave: Place soup in a microwave-safe bowl. Cover. Cook for 1½ to 2 minutes. Let sit for 1 minute. Stir. Serve. Stovetop: Heat soup in a saucepan, stirring occasionally.
